French chef Jean-George Vongerichten has unveiled a beautiful eatery, “Market”, inside the Shangri-La Hotel downtown Vancouver – and it is the epitome of simple elegance. Combining global flavors, with an emphasis on Asian flavors, with the chef’s “greatest hits”, diners can expect to be swept off their feet with the subtle nuances of each dish.
The restaurant offers breakfast, lunch, brunch and dinner – each occasion with a menu to swoon over. At a recent dinner we chose from offerings like: steelhead sashimi with crispy rice and chipotle emulsion, chicken coconut soup with ginger and shiitake, roasted sablefish, lamb loin and soy glazed pork cheek with celery and apple salad.
The cocktail master at the bar in the restaurant is reason enough to go. With boutique and hard-to-find liquors gracing the shelves, interesting and innovative beverages are mixed regularly for guests. We had some of the best spicy margaritas we’ve ever had in our adult lives at Market.
The service at Market is stellar, with extreme attention to detail. Each moment and need was anticipated, which is always a nice thing. Market is a definite “must” in Vancouver, whether you’re a guest at the Shangri-La or if you’re just in the mood for an exceptional meal.
