Executive Chef Morgan Wilson and restaurant chef Anthony Young helm the kitchen at The Veranda at The Empress Hotel in Victoria. Their seasonal outdoor environment is the perfect place for a casual yet delicious dinner with views of Victoria’s inner harbor and the city lights. Here they offer a beautiful menu ladened with local produce which is derived and sourced from the area’s ample supply of organic ingredients and fresh seafood. Just over the mountains lies British Columbia’s most beloved wine growing region where many of their vintages hail from. The two men have made it their mission to offer diners only the best at The Veranda, and it shows.
The gastronomy is well-thought-through and combines unique flavors which are unexpected yet comforting. As nights can get cool in B.C., the restaurant offers blankets to keep warm and even sunglasses if the sun gets too bright. On a recent chilly night, I opted for the multi-course chef’s tasting menu which was personally delivered by Mr. Young – a special treat. One “must” before dinner is enjoying the view over an Empress 1908 martini, which is a tea-infused vodka martini with lemon juice and egg white. It’s delivered with a petite scone to reference the famous Afternoon Tea served at the hotel for decades.
